Hi Montgomery Friends,
Enjoyed the write-up on Suzy, who as most of you know by now, has been a huge inspiration to me, helped me get organized, and envision new opportunities for healthy food and forest products in the Princeton area and the rest of the world. In addition to her great cooking, she has a keen eye for market opportunities and has landed a major cookie contract with “Whole Foods”. Two years ago she and her husband John, and boys Dillon and Jeremy, helped me erect our 30×72 high tunnel/greenhouse.
While on the farm Suzy made some great corn relish. This week we sent it along in our weekly CSA box, as our sweet corn hit its high point (we are a bit slow up here in the Kingdom).

Suzy’s Corn Relish
- 4 cups corn cooked
- 2 cups diced tomatoes
- ¾ cup diced regular green or red pepper, with jalapeño pepper to taste
- juice of 1 lemon
- salt & pepper to taste, mix and enjoy with tortilla chips, crackers, etc.
Warning: Dice your jalapeño pepper small with disposable gloves on!
